Sutta Badanekayi Gojju - Roasted Brinjal gojju

Ingredients:

Brinjal-2
Green chilly- to taste
Tamarind- Small lemon sized
Jaggery- Small lemon sized
Salt to taste
Coconut oil- 2 tsp
Red chilly-1
Urad dall- 1/2 tsp
Asafoitida- small pinch
Mustard seeds- 1/4 tsp
Curry leaves- few
Coriander leaves- few

Recipe:

Roast the brinjal on flame.

When it nicely charred; switch off the flame.

Let it cool and the peel off the outer charred skin and remove the stalk & stem.

Mash the brinjal and add tamarind juice, jaggery, salt & green chilly.

Add little water to adjust the consistency.

Add tampering.

Add finely chopped coriander leaves.

Serve with rice, roti or chapati.

Note:

You can also add few finely chopped onions.
