Beetroot Coconut Burfi

Ingredients:

Grated Beetroot- 1 cup
Grated coconut- 1 cup
Sugar- 2 cups
Cardamom powder- 1/2 tsp

Recipe:

Heat ghee in a pan and add fry the coconut and beetroot till it becomes fragrant.

Add sugar and keep stirring in medium flame. When the sugar dissolves; the mixture starts bubbling.

Add cardamom powder.

After minutes the mixture will start leaving the pan.The mixture becomes thick, frothy & releases ghee.

Pour the mixture in a greased tray. Let it cool.

Cut using a knife into squares or diamonds.
