Soft & Spongy Aval- Poha Idli

Soft & Spongy Aval- Poha Idli - ಅವಲಕ್ಕಿ ಇಡ್ಲಿ 
Ingredients:

White rice- 1 cup
Urad dal- 1/4 cup or 3 tbl sp
Aval/Poha(medium)- 1 cup
Fenugreek seeds- 1/4 tsp
Salt to taste

Method:

Soak rice and urad dal + fenugreek seeds separately for about 4-5 hours.

Grind the rice and urad dal separately.

Grind the urad dal & fenugreek seeds into a smooth paste.

Wash poha 2 times in water; drain excess water.

Grind rice & aval coarsely.

The consistency of the batter should be bit thicker than dosa batter.

Add salt and mix it well.

Keep the batter overnight for fermentation.

Fill the batter in the idli mould.

Steam cook for about 15- 20 minutes.

Let it cool and scoop out the idli's using a spoon.

Serve the idli's with chutney or sambar.
