Red boiled Rice dumpling-Steamed rice balls-Pundi-Akki unde

Ingredients:

Red rice(Boiled rice)- 2 cups
Salt to taste
Urad dall- 1/2 tsp
Red chilly- 1
Mustard seeds- 1/4 tsp
Grated coconut- 2 tbl sp

Method:

Soak rice for about 4-5 hours.

Grind the rice and grated coconut by adding required amount of water; add salt.

The consistency of the batter should be like dosa batter and it should not be too smooth.

Now heat 1-2 tsp oil in pan & fry the urad dall, red chilly, mustard seeds. Add grated coconut & fry for few minutes. Add curry leaves.

Now pour the batter into the pan and keep on stirring(avoid sticking to bottom) in a low to medium flame until it becomes like dough.

Prepare balls out of this dough and cook in the steam for about 15-25 min just like idli.

Serve it with any sambar or chutney.
