Cucumber kheer-payasam

Cucumber kheer-payasam - ಮುಳ್ಳು ಸೌತೆ ಪಾಯಸ 

Ingredients:

Grated Cucumber(mullusowthe)- 1 cup
Grated coconut- 1 cup
Jaggery- 1 cup
Cardamom powder- 1/4 tsp
Raisins & Cashew nuts(fried in ghee)- 2 tbl sp
Rava/Semolina- 2 tbl sp

Recipe:

Peel & grate the cucumber.

Cook the grated cucumber.

Grind the coconut with 1 cup water & extract coconut milk.

Add semolina, jaggery & coconut milk to the cooked cucumber.

Cook up to boil. Add cardamom powder, raisins & cashew nuts.

Note:

If  you don't want to grate the cucumber means you thinly chop it.

For thickening the consistency of the kheer you can add aval/poha, rice flour instead of rava/semolina.
