Kosambari-Healthy Salad

Ingredients:

Grated Carrot- 1/2 cup
Sweet corn- 1/2 cup
Pomegranate seeds- 1/2 cup
Tomato(finely chopped)- 1/4 cup
Cucumber(finely chopped)- 1/4 cup
Sprouted Black gram(ಉದ್ದು )- 1/4 cup
Sprouted Green gram(ಹೆಸರು )- 1/4 cup
Raisins- 1-2 tbl sp
Grated Coconut- 2 tbll sp
Green chilly(finely chopped)- 1
Coriander leaves(finely chopped)- 1 tbl sp
Salt to taste
Lemon juice- 1 tbl sp

For seasoning:

Red chilly- 1
Urad dal- 1 tsp
Mustard seeds- 1/4 tsp
Asafoetida- small pinch
Curry leaves- few
Coconut oil/Ghee- 1 -2 tsp

Recipe:

Cook the sweet corn with little salt.
Keep ready all the ingredients.
Add all the ingredients in a wide bowl.
Add seasoning. Mix it well.
Kosambari-Healthy Salad
Note: I have added deseeded cucumber & tomato or else it will release more water.
