Bitter gourd Subji - ಹಾಗಲಕಾಯಿ ಪಲ್ಯ


Bitter gourd- 1(medium sized)
Salt to taste
Tamarind- lemon sized
Jaggary- orange sized
Oil- 2 tsp
Red chilly- 1
Urad dall-1 tsp
Mustard seeds- ¼ tsp
Curry leaves- 1 strand

For masala:

Grated coconut- 2 tbl sp
Coriander seeds-1 tsp
Cumin seeds-1/2 tsp
Fenugreek seeds1/4 tsp
Black pepper-2-4
Red chilly-1-2
Curry leaves-2-4
Asafoetida- a small pinch


Wash the bitter gourd finely & chop them.

Take 2 tsp oil in a pan & fry the red chilly, urad dall & mustard seeds. Finally add curry leaves.

Now add chopped bitter gourd ,salt, jaggary, tamarind & water; cook well until water evaporates.

Dry roast all the ingredients(except coconut) for masala until you get an aroma & slightly changes colour.

Prepare a coarse masala powder out of grated coconut & roasted ingredients.

Finally add the masala powder to the cooked bitter gourd & mix it well.
