Mixed Vegetable Masala

This is a easy and quick recipe without coconut; goes well with rice or as a side dish for breakfast items like dosa, chapati, poori.


Chopped mixed vegetables(carrot, beans, green peas, cauliflower, potato)- 2 cup
Onion- 2
Tomato- 2
Green chilly- 1
Ginger- Small piece
Garlic- 2
Jaggary- small piece
Tamarind-small pinch
Cumin seeds powder- ¼ tsp
Coriander seeds powder- ½ tsp
Termeric powder- ¼ tsp
Chilly powder- 11/4 tsp
Garam masala powder- ½ tsp
Coriander leaves- few
Salt to taste
Oil- 2 tbl sp


Cook the vegetables by adding salt in pressure cooker up to 2 whistles.
Finely chop the tomato and onion.
Grind the tomato, onion, green chilly, ginger and garlic to a fine paste. (Take only half of chopped onion & tomato for grinding.)
(You can grind it after frying or without frying. Left to your choice.)
Fry the remaining chopped tomato & onion in 2 tbl sp oil.
Now add cooked vegetables, ground paste, turmeric powder, cumin seeds powder, coriander seeds powder & garam masala.
Add 1 cup water and cook for few minutes.
Once it gets the desired consistency switch off the flame.
Tastes good with chapati, poori or roti.
