Hagalakayi - Bitter gourd Menaskayi - ಹಾಗಲಕಾಯಿ ಮೆಣಸುಕಾಯಿ 


Bitter gourd- 2(medium sized)
Salt to taste
Turmeric powder- small pinch
Tamarind- Lemon sized
Jaggary- Orange sized

For Grinding (Masala)

Grated Coconut - 1 cup
Coriander seeds- 1 tsp
Urad dal- 1 tsp
Fenugreek seeds- 1/4 tsp
Cumin seeds - 1/2 tsp
Sesame seeds / Til -4-5 tsp ( Black / white )
Red Chilly  - 4-5
Asafoetida- Small pinch

For Tempering

Oil / Ghee - 2 tbl sp
Mustard seeds- 1 tsp
Curry leaves- few


Cut the bitter guard remove the seeds.

Chop them into small pieces.

Add water and cook to boil. Drain & discard the water.

Repeat this step for 3-4 times to reduce bitterness.

After this process cook the bitter guard by adding salt, jaggary, tamarind & turmeric powder.

Now heat oil in a pan and fry the red chilly, coriander seeds, urad dal, fenugreek seeds, cumin seeds, sesame seeds, asafoetida. 

Finally add grated coconut fry for 2 minutes. Grind  masala paste by adding required amount of water.

Add this ground masala paste to the cooked bitter guard. 

Mix well and cook this mixture to boil. 

Fry the mustard seeds in 2 tsp oil; add curry leaves and pour this to the menaskayi.
