Mint/Pudina Pulao

Mint/Pudina Pulao - ಪುದೀನ ಪಲಾವ್ 
Mint/Pudina Pulao

For Rice

Basmati rice- 1 cups
Clove-2
Black pepper-2
Green Cardamom-2
Black Cardamom-2
Cinnamon-1 piece
Cumin seeds- 1 tsp
Bay leaf-1
Water- 2 cups
Salt to taste
Ghee- 2 tblsp
Onion(thinly sliced)- 1
Chopped vegetables(carrot, beans, potato, cauliflower, capsicum)- 1 cup
Green pea-1/4 cup

For Mint/Pudina paste

Mint/Pudina leaves- 1 cup
Ginger and Garlic  paste- ¼ tsp
Green chilly 1
Grated coconut- 2 tblsp
Turmeric powder-1/4 tsp

For garnish

Cashew nuts(fried in ghee)-2 tblsp
Coriander leaves- few
Lemon juice- 1-2 tblsp

Recipe:

Prepare mint/pudina paste by adding mint leaves,ginger & garlic paste, green chilly, grated coconut, turmeric powder.  Add small amount of water before grinding.
Wash the rice in water.

Heat ghee in a pan & fry the cardamoms, cloves, cinnamon, cumin seeds, bay leaves.

Now add sliced onion and fry it.

Then add vegetables and fry it for 2 minutes.

Add rice and fry for 2 minutes.

Cook the spice & vegetable mixed rice in pressure cooker upto 3 whistles.

When the rice is ready garnish with coriander leaves and cashew nuts.

Add lemon juice and mix well.

Serve this pulao with any raitha.
