Maida burfi - ಮೈದಾ ಬರ್ಫಿ 
Maida burfi


Maida- 1 cup
Sugar- 2 cups
Water- 1 cup
Ghee- ½ cup
Badam & Cashew nuts (finely chopped and fried in ghee)- 2 tbl sp
Cardamom powder-1/4 tsp
Food colour- small pinch


Heat the ghee in a pan and fry the maida for about 5 minutes in a low flame.
Dissolve the sugar in water to prepare sugar syrup. The sugar syrup should be of one string consistency. Switch off the flame in this step.
Note: To confirm the string consistency you should touch the sugar syrup from the ladle or spoon between your thumb & forefinger. While separating your fingers you can see a string formation.

Now add small pinch of food colour and dry fruits to the sugar syrup and stir well.
Then add the roasted maida flour to the sugar syrup. Mix well without any lumps.
After mixing thoroughly switch on the flame and stir for about 2-4 minutes.
When the mixture slightly starts to leave from the sides of the pan pour the mixture on a ghee greased plate evenly (the mixture should be flowy while transferring to greased plate)
Let it cool a bit and then cut to your desired shapes when it is slightly warm.
