Hyderabadi vegetable biryani

Hyderabadi vegetable biryani is a healthy and tasty breakfast recipe. Moreover a perfect lunch box recipe because it is a rice item rich with vegetables and dry fruits.

Ingredients:

For Rice:

Basmati rice- 1 cups
Cardamoms- 2
Cloves- 2
Cinnamon- 1 piece
Bay leaf- 2
Mace/javitri- 2 strands
Water- 2 cups
Salt to taste
Safron- 4-5 strands(dissolve in 2 tblsp milk)
For Vegetable Gravy:

Chopped Vegetables (Carrot, Beans, Potato, Cauliflower/Gobi)- 1 cup
Green peas- ¼ cup(Soaked in water)
Onion- 1
Green chilly- 1
Ginger & garlic paste- ¼ tsp
Caraway seeds/shah jeera- 1 tsp
Cardamom- 2
Cloves- 2
Cinnamon- 1 piece
Bay leaf- 2
Mace/javitri- 2 strands
Curd- 2 tbl sp
Turmeric powder- ¼ tsp
Red chilly powder- 1/4 tsp
Cashews- 1 tblsp
Raisins- 1 tblsp
Almonds/badam- 1 tblsp
Ghee- 2 tbsp
Salt to taste
Coriander leaves- few
Mint leaves- few
Recipe:


Wash the rice in water.
Cook the rice in pressure cooker by adding cardamoms, mace, cloves, cinnamon, bay leaves & salt upto 3 whistles.

Cook all the vegetables & green peas by adding salt & water.

Heat ghee in a pan & fry the caraway seeds, cardamoms, mace, cloves, cinnamon, bay leaves.
Now add onions & fry till golden brown.

Add the green chilly, ginger garlic paste. Fry for a minute.
Add turmeric powder & red chilly powder & stir the mixture.
Now add the cooked vegetables and stir for a minute. Add curd, salt, mint and coriander leaves & Stir the mixture well.


Fry the dry fruits in ghee. Add the  fried dry fruits almonds, raisins and cashew nuts to the vegetable gravy.
Sprinkle half of the saffron-flavoured mixture on the cooked vegetables. Also add mint and coriander leaves.
Now spread the rice. Sprinkle the remaining safron-flavoured milk, fried dry fruits, mint and coriander leaves.
Close the lid & place on the gas stove at low fire.

Note: 
  • You can make more layers if you like. The rice should be the top layer.
  • Serve the vegetable biryani  with your choice of raita; serve equally the vegetables as well as rice.
