Tukdi/Diamond cuts/Shankar poli


Maida- 1 cup
Salt to taste
Sugar- 2 tsp
Chilly powder- ¼ tsp
Cumin seeds- 1 tsp
Ghee- 2 tsp
Oil to fry


1. Take maida in bowl, add required amount of water, salt, sugar, chilly powder & cumin seeds and kneed it well; finally add 2 tsp of ghee and knead it. The dough should be like that of chapathi's and make lemon sized balls.
2. Take one dough ball & roll it to make round chapathi; cut this chapathi into diamond or square shape.
3. Heat oil in a pan and deep fry the diamond cuts until golden brown.
4. Remove & drain excess of oil on a paper.
5. Now crunchy crispy diamond cuts are ready to taste.

• It is a good snack for evening with tea or coffee.
• You can take when you go to any picnic or trips.
