Karjikayi- ಕರ್ಜಿಕಾಯಿ 


For dough:
  • Maida- 1 cups
  • Chiroti rava/ fine semolina- 1/4 cup
  • Salt to taste
  • Hot water/milk-1-2 cups
  • Hot ghee/oil- 2 tsp
For stuffing:
  • Grated dry coconut- ½ cup
  • Powdered sugar- 1/4 cup
  • Dry fruits- ½ cup (any of your choice like badam, cashew, raisins, pista,dates etc)
  • Poppy seeds- 1 tsp
  • Cardamom powder- 1/4 tsp

1. Take maida in bowl, add required amount of hotwater/milk, salt, sugar, and kneed it well; finally add 2 tsp of hot ghee/oil and knead it. The dough should be like that of chapathi's and make lemon sized balls.
2. Take one dough ball & roll it to make round flat poori’s. If it is not round you can cut cut  into round shape.
3. Place 1 tsp stuffing on one half of poori and fold another half along the center.
4. Seal the ends using mould; place the poori with stuffing on the mould & press to seal the edge & remove the excess dough.
5. Heat oil in a pan and deep fry the diamond cuts until golden brown.
6. Remove & drain excess of oil on a paper.
