Wheat Halbai - ಗೋದಿ ಹಾಲ್ಬಾಯಿ  

Wheat Halbai
  • Wheat - ½ cup
  • Grated coconut- ½ cup
  • Jaggery- ½ cup
  • Cardamom powder- ½ tsp
  • Ghee- 5-6 tblsp

1. Soak wheat in water for about 3-4 hours.

2. Grind soaked wheat into a fine paste; the paste should be like dosa batter. 
3. Filter it & discard the residue; Keep it aside for about one hour and discard the top water layer.
4. Grind the grated coconut to prepare coconut milk(The coconut milk should be thick).
5. Heat the pan and dissolve jaggery in 1/2 cup of water; add 2 tblsp ghee.
6. Now add filtered wheat batter and thick coconut milk.
7. Keep on stirring to avoid lumps in a low flame; add 4 tblsp ghee.
8. When it leaves from the pan switch off the flame (it should not be too sticky to the fingers while pressing).
9. Grease 1 tsp ghee over a plate and pour halbai paste & spread it evenly.
10. Let it cool & cut to your favourite shapes.

Halbai can be preserved upto 1 day without refrigeration; but it can be stored for 3-4 days.
